Taking the Cantonese custom of dim sum from an afternoon delicacy to an all-day event, serving high-end Franco-Asian patisserie with a world-class tea list, and creating another iconic interior in partnership with Christian Liagre, is what Yau succeeded in delivering in 2004 with Yauatcha, his take on the Taipei teahouse. A Michelin star, the second of his career so far, after Hakkasan, followed in 2005.
